Muesli

Ingredients:
  • 20 oz crushed pineapple with juice
  • 1 tsp salt
  • 1 1⁄2 tsp vanilla flavor
  • 3 cups rolled oats, uncooked
  • 2 large apples, unpeeled, shredded (1 1⁄2 cups)
  • 1⁄4 cup toasted almonds, chopped
  • 1⁄4 cup unsweetened coconut flakes
  • 1⁄2 cup dried papaya pieces or raisins
Directions:
  1. Dissolve the salt in pineapple and juice. Stir in vanilla and set aside.
  2. Mix oats, apples, almonds, coconut, and dried fruit in a large bowl.
  3. Combine the pineapple mixture with the contents of the bowl and mix well.
  4. Cover and refrigerate overnight.
  5. Serve with non-dairy milk, topped with sliced ripe bananas.
