Stuffed Dates

  • 12 Medjool dates
  • 1/3 cup almond or peanut butter
  • 2-3 Tbsp hemp seeds (use more if the nut butter has a thinner consistency)
  • 1/2 cup fine shredded coconut
  1. Slice the dates lengthwise and remove the pits.
  2. Mix the butter with the hemp seeds.
  3. Fill the date with 1/2 Tbsp of the nut mixture. (Note: may use half of a walnut or a roasted whole almond on the top of the date).
  4. Dip the top of the date in the coconut. Serve.
